25 Days of Cookie, day 2

Today’s cookie is a favorite of Dear Husband and is one of his mother’s recipes. The dough needs to be refrigerated before baking, so I mixed them yesterday making for minimal mess today. Dear Husband was enjoying a day off today and taking advantage of “dough nibbling” along with the fresh, hot cookies coming out of the oven.


Ice Box Cookie ingredients

Ice Box Cookies

Beat together:

1 c Brown Sugar         1 c Granulated Sugar         1 1/2 c Melted Shortening

3 Eggs, well beaten         1 tsp Vanilla

Mix together:

5 c Flour         2 tsp Baking Soda

1 tsp Cinnamon         1 tsp Salt


        1 c Walnuts, chopped


Ice Box Cookie mixing

Add dry ingredients to Shortening/Sugar mixture; Stir together until all incorporated; Shape dough into 2 inch logs & wrap in waxed paper; Store in refrigerator overnight;

Slice in 1/2 slices; Bake at 350 for 10-12 minutes.

  1. wow, i forgot all about these cookies. love these cookies. I have never attempted making them but my family used to make them “back in the day”.
