25 Days of Cookies, day 10

“Run, run as fast as you can, you can’t catch me I’m the Gingerbread Man.” Although that quote seems like the mantra we all repeat over and over in our heads as we hustle through the holidays, today it is just the words of our day 10 cookie, Gingerbread Men cookies.

This Gingerbread Man recipe came to us through a cookie exchange with friends and is loved and requested by both sons. The cookie flavor is delicious and it is hard to resist plucking them from the cookie tray and gobbling several down straight out of the oven.

Gingerbread Cutouts

1 c Shortening

1 c Sugar

Beat shortening and sugar.

1 Egg

1/2 c Light (mild) Molasses

1/2 c Dark (full) Molasses

2 TBS Vinegar

Add egg, molasses, and vinegar to shortening and sugar, beat until fully blended.

5 c Flour

1 TBS Ginger

1 1/2 tsp Baking Soda

1 tsp Cinnamon

1 tsp Ground Cloves

Add 2 cups Flour and other dry ingredients to shortening mixture. Add remaining Flour 1 cup at a time, blending completely. Cover and chill for at least 3 hours (overnight is great). On lightly floured surface, roll to about 1/8 inch thickness, cut into shapes, place on cookie sheet and bake for 5-7 minutes. Cool on cookie sheet for 2 minutes before moving to cookie rack. If mini cookies are being made, reduce baking time to 4-5 minutes.


We are now stocked with a whole army of large and small Gingerbread Men.
