After a day filled with Christmas fun, day 11’s cookie had to be enjoyed as a midnight snack. Our day included a visit to Daffin’s Chocolate Factory where we had a tour of the candy making process, a stop at the Daphne’s store to purchase a few goodies,…
…and finally a full immersion into Christmas decor with a stop at Kraynak’s Garden Center to walk through their “Santa’s Christmas Land,”

So after returning home and catching up on the daily chores, I turned to today’s cookie, Ranger Cookies. This recipe is from a friend and after enjoying her yummy cookies, I knew it was a recipe that would be a hit at our house. Sadly I had not yet made a batch myself, so this seemed like the perfect opportunity to shake the recipe card loose from it’s book and put it to the test.
1 c Butter
1 c Sugar
2/3 c Brown Sugar
2 tsp Vanilla
Beat butter and sugars; add eggs and vanilla.
2 c Flour
1 tsp Baking Soda
1/2 tsp Baking Powder
1/4 tsp Salt
Mix together flour, soda, baking powder and salt; stir into butter, sugar mixture.
2 c Oatmeal
2 1/2 c Rice Krispies
1 c Coconut
1 c Chocolate Chips
Stir oatmeal, rice krispies, coconut and chocolate chips into cookie dough. Drop heaping teaspoon full onto cookie sheet; Bake @ 375 for 8-10 minutes.
Mmmm, these cookies are crunchy and chewy all at the same time and feel a little like you are eating a granola cookie. Enjoy!
